Tradition, yes — but interrogated. Courageous simplicity, intention over accumulation. What is superfluous is removed; what matters is served.
Belotti is the mind shaping 887: a chef who thinks from the roots and cooks with intention. Born in São Paulo and marked by the energy of his childhood home — number 887 — where food existed to bring people together, he trained under Mallmann and Irizar, studied at the Basque Culinary Center, and worked in several high-level national and international restaurants before refining his own perspective in Donostia. He does not cook to repeat, but to distill.

Our cellar is built with the same philosophy as our cuisine: respect for origin, an understanding of territory, and intention in every selection. Local wines coexist with more distant references, small productions alongside established projects, always chosen for their coherence, their way of working, and their ability to express the place they come from. We are not interested in accumulating labels, but in accompanying the dish, the moment, and the conversation.
